Gajjar Halwa With Rabri Stuffed In A Tart



That's how I like to eat my favourite Halwa :)


Best thing about Winters is the Red Carrots.
You can make so many dishes with it and what is best that Red Carrots are so healthy and so is Gajjar Ka Halwa. When I make it on a daily basis, I avoid adding Khoya or Mawa, as that is very fattening.
So all I add is Milk, Ghee, Sugar and Dry Fruits.
Dry Fruit are very healthy and they also help you keep warm during winters.
I am a very big Ghee fan.
Yes! You read it right. It's a myth that Ghee makes you fat.
Everything in moderation is good for your health and ghee is something that is very good for your system, specially for Women who mostly end up suffering from knee problems as they get older.

So let me share with you the recipe of this yummy dish :)

Gajjar Ka Halwa 

Ingredients 

1 Kg. Red Carrots - grated
3/4 - 1 cup Sugar depending on your sweet preference
1 litre Milk
1/3 - 1/4 Cup Ghee - How much you want to put, its upto you. You can make it without it too, if you want.
Assorted Dry Fruits like Raisins, Cashew, Almonds, etc.
1/2 tsp Cardamom powder

Method

In a kadhai, add grated carrots and cook on low flame till the water from the carrots dries up. It should take 20 - 30 minutes.
Then add milk and cook on low heat till the carrots soak up the milk completely and become almost dry. This should 1 - 1.5 hours or more too. In between while its cooking, add cardamom powder.
Add sugar and ghee and mix well.
Add dry fruits. Keep some for garnishing too.
In between while its cooking, keep stirring so that it doesn't get burnt.
After adding everything, keep stirring for 5-10 minutes so that it gets mixed well.
Serve hot.

You can have it like this also or you put Halwa in a tart and garnish it with Rabri and Raisin as shown in the picture.
